Canadian Old Fashioned

Written by Arik Harley
A Canadian twist of a modern classic. A maple flavoured Old Fashioned with a bitter sweet taste. That will intrigue people to try an old fashioned for the first time or entice an old fashioned lover.

Ingredients

  • 2 oz. 100% Rye Canadian Whisky
  • 1/2 oz. Fresh Maple Syrup
  • 1/2 oz. Canada Dry Ginger Ale
  • 2 Dashes of House Made Maple Bitters
  • 1 Orange Peel
  • 1 Maple Syrup Candied Orange Wheel
  • Rocks glass or coupe glass

Steps

  1. 1. Have the glass you will be serving in ready by expressing oils from your orange peel over the glass and wiping the rim with it.
  2. 2. Place peel in bottom of mixing glass, pour over maple syrup, dash bitters and muddle for 15 seconds.
  3. 3. Add Ice and Whisky then stir for 15 seconds.
  4. 4. If in rocks glass have the glass half filled with ice and then strain ingredients in. If in a coupe use the same method without ice.
  5. 5. Garnish with maple syrup candied orange and serve.
  6. NOTE: this method is for high volume fast pace restaurants. If you decide to use the recipe but have more time for drinks to he made you could consider smoking the cocktail with a dome and maple chips. It elevates the drink to a entire new level plus you can charge an extra 5 dollars or so without the guest thinking its over priced due to the experience of opening the dome in front of them while serving.

I'm Arik Harley

My name is Arik! I've been a restaraunt lover since I was running around my family restaurant at 8 years old. I've grown since then....not by much. I've worked in a handful of different restaurants trying to find my perfect style....well guess what? There wasn't one...I LOVE IT ALL. I've gained extensive knowledge in beer and spirits but found my love for wine and cocktails to be unmatched. I pursued an education in restaurant and hotel management as well as sommelier credentials. I've worked in restaurants for almost 14 years now with over 10 behind the bar.
