Bird is the Word
This is Jungle Bird meets The Last Word. I removed the Campari and Luxardo Maraschino from their respective recipes and replaced with Amaro. A much nicer and balanced cocktail. Created during my last 7 years at The Tonga Hut.
Ingredients
- 1.5 oz. Hamilton Jamaican black pot still rum
- .5oz. Ford’s Gin
- .5oz. green chartreuse
- .5oz. Montenegro amaro
- .5oz. simple
- .75oz. lime juice
- 2oz. Pineapple juice
Steps
- Fill a tin shaker with ice, add all ingredients, shake well, Pour into a tall bamboo style glass.

Two years ago, I was hired to develop the cocktail menu at Hades Hula House in Semaphore, Adelaide, South Australia. They went on to be nominated Best Small Australian Bar 2 years in a row.
I started my career in Washington D.C. back in 1988. I will retire when I am slumped over the bar.
