Well Rested

Finally a chilli and chocolate cocktail that will leave you wanting more, and NOT reaching for a glass of milk. A simple enough mix with only 4 liquid ingredients all of which alcoholic, but measured precisely and stirred for extra stillness. Sometimes less is more and we didn't want the main attraction to be overlooked, I.e like a well crafted Old Fashioned or Negroni. Chilli tequila is a thing and we know that, but house infusions of any kind that we craft at the bar, simply allows us to control our flavour outcomes. We wanted a spirit booming with HOT chilli warmth, but more manageable in our desired cocktail. And of course the garnish for this drink is IRRESISTIBLE in itself, tempered to last as long as you wish.

Ingredients

  • .@eljimadortequila reposado (house infused with red chillies)
  • .@briottetliqueur creme de cacao
  • .@kahluauk
  • .@bettersbitters chocolate
  • .dash of sea salt
  • Garnished generously with @callebautchocolate 70% cocoa, that we tempered & shaped ourselves!
  • CHILLI TEQUILA INFUSION ~
  • .3 red chillies
  • .700ml reposado (well rested) tequila
  • .cut into quarters & REMOVE seeds (or you will regret it)
  • .leave to infused for 72hrs
  • .remove said chillies, scorch them under a blowtorch or place under the grill for a matter of minutes, then reunite them with your tequila.

Steps

  1. CHILL A MARTINI GLASS
  2. GRAB YOUR MIXING GLASS
  3. .40ml chilli infused reposado tequila
  4. .15ml dark chocolate liqueur
  5. .10ml coffee liqueur
  6. .2 dash of chocolate bitters
  7. .dash of sea salt
  8. ADD ICE
  9. STIR FOR 2 MINS
  10. STRAIN INTO CHILLED MARTINI GLASS
  11. TEMPERED CHOCOLATE GARNISH
