Rum lovers will be passionated with this drink!!! Matching the culture and rum of Latin America (with some infusions),with the excellent French knowledge about liqueurs we made this delicious drink!!! Inspired from our chef’s Michalis Birtsios handcrafted ingredients I decide to replace the ordinary use of fruits puree,with an air from passion fruit!!! The same I did and for the garnish,I made a caramel with lime juice and passion fruit and the result was really amazing!!! So we vacuumed 2 different dark rums with peach and some orange husks,we put the vacuum bag into the soups vide for 2 hours at 75 degrees!!! Then we started to create the air foam from passion fruit using fresh passion fruits some yuzu juice and proespuma for an excellent result!!! After that we crafted the caramel using glucoze honey lime and fresh marmalade from passion fruit!!!
